- 1 cup grated zucchini
- 1 cup oats
- 1/2 cup almond flour
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup chocolate chips (optional)
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the grated zucchini, oats, almond flour, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Mix until well combined.
- In a separate bowl, whisk together the baking powder, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients and mix until fully blended. Stir in the chocolate chips if using.
- Drop spoonfuls of the batter onto a parchment-lined baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- Remove from the oven and let cool on a wire rack.
