  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the grated zucchini, oats, almond flour, honey or maple syrup, melted coconut oil, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the baking powder, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until fully blended. Stir in the chocolate chips if using.
  5. Drop spoonfuls of the batter onto a parchment-lined baking sheet.
  6. Bake for 12-15 minutes or until the edges are golden brown.
  7. Remove from the oven and let cool on a wire rack.
