  • 1 pound Italian sausage
  • 8 ounces chorizo
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook the rigatoni according to package instructions; drain and set aside.
  2. In a large skillet, cook the Italian sausage and chorizo over medium heat until browned.
  3. Add the diced onion and minced garlic, cooking until softened.
  4. Stir in the crushed tomatoes and Italian seasoning; simmer for 10 minutes.
  5. Add the spinach and cooked rigatoni, mixing until well combined.
  6. Top with shredded mozzarella cheese and cover until cheese is melted.
