Easy, Healthy Breakfast Egg Muffins

These Easy Healthy Breakfast Egg Muffins are perfect for a quick, nutritious breakfast. Packed with turkey bacon and veggies, they are great for meal prep!

Ingredients

  • 6 large eggs
  • 1 cup turkey bacon, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup spinach, chopped
  • 1/4 cup onion, diced
  • 1/2 cup shredded cheese (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk the eggs and add salt and pepper.
  3. Add the chopped turkey bacon, bell peppers, spinach, and onion to the egg mixture.
  4. Grease a muffin tin and pour the egg mixture into each cup, filling them about 3/4 full.
  5. If you’re using cheese, sprinkle it on top.
  6. Bake for 20-25 minutes or until the muffins are set in the middle.
  7. Let them cool slightly before removing from the tin.

Notes

  • These egg muffins can be stored in the fridge for up to a week.
  • They are also freezer-friendly for easy reheating!
