- 4 cod fillets
- 1 pound potatoes, diced
- 1 cup heavy cream
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- In a large pan, heat olive oil over medium heat and sauté the onions until translucent.
- Add garlic and cook for another minute.
- Add the diced potatoes and season with salt and pepper. Stir and cook for about 10 minutes.
- In a separate bowl, mix heavy cream with chopped rosemary.
- Pour the cream mixture over the potatoes in the pan.
- Place the cod fillets on top and season with more salt and pepper.
- Transfer the pan to the oven and bake for 20-25 minutes until the cod is cooked through.
