Creamy Rosemary Cod & Potatoes

A flavorful and easy to prepare dish that combines creamy sauce, fresh rosemary, and tender cod and potatoes.

  • 4 cod fillets
  • 1 pound potatoes, diced
  • 1 cup heavy cream
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat olive oil over medium heat and sauté the onions until translucent.
  3. Add garlic and cook for another minute.
  4. Add the diced potatoes and season with salt and pepper. Stir and cook for about 10 minutes.
  5. In a separate bowl, mix heavy cream with chopped rosemary.
  6. Pour the cream mixture over the potatoes in the pan.
  7. Place the cod fillets on top and season with more salt and pepper.
  8. Transfer the pan to the oven and bake for 20-25 minutes until the cod is cooked through.

Notes

  • For extra flavor, consider adding lemon zest to the cream mixture.
  • Perfect for serving with a side salad.
