  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons coffee liqueur (optional)
  • 2 tablespoons cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, mix flour, cocoa powder, sugar, baking soda, baking powder, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, eggs, vanilla extract, and brewed coffee.
  4. Combine wet and dry ingredients, mixing until smooth.
  5. Fill cupcake liners about 2/3 full with batter and bake for 18-20 minutes.
  6. Let cupcakes cool completely on a wire rack.
  7. In a separate bowl, beat mascarpone cheese, heavy cream, powdered sugar, and coffee liqueur until soft peaks form.
  8. Once cupcakes are cool, frost them with the mascarpone mixture.
  9. Dust with cocoa powder before serving.

Notes

  • For a stronger coffee flavor, use espresso instead of brewed coffee.
