  • 3 cups grated carrots

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the granulated sugar, brown sugar, eggs, and vegetable oil until well combined.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Fold in the grated carrots and walnuts.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack.
