Brown Butter Butternut Squash Pasta

A delicious and comforting dish combining the nutty flavors of brown butter with sweet butternut squash and savory turkey bacon.

  • 1 pound butternut squash, peeled and diced
  • 8 ounces pasta of choice
  • 4 slices turkey bacon, chopped
  • 4 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh sage, chopped

Instructions

  1. In a large pot, cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, cook the turkey bacon until crispy, then remove and set aside.
  3. In the same skillet, melt the butter over medium heat until it turns golden brown.
  4. Add the diced butternut squash and cook until tender.
  5. Stir in the cooked pasta, turkey bacon, salt, pepper, Parmesan, and sage.
  6. Mix well and serve immediately.

Notes

  • For a vegetarian option, you can omit the turkey bacon and use olive oil instead of butter.
  • This dish can be served warm or at room temperature.
