These Blackberry Cinnamon Swirl Oatmeal Muffins are a delicious and easy treat perfect for breakfast or a snack.

  • 1 cup rolled oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup blackberries, fresh or frozen

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a bowl, combine oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, whisk together buttermilk, vegetable oil, and egg.
  4. Mix the wet and dry ingredients until just combined.
  5. Fold in the blackberries, being careful not to crush them.
  6. Spoon the batter into the muffin tin, filling each liner about 2/3 full.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Let them cool for a few minutes before transferring to a wire rack.

Notes

  • For a sweeter muffin, add more brown sugar.
  • These muffins freeze well for up to three months.
