  • 4 slices turkey bacon
  • 1 cup bell peppers, sliced
  • 1 cup carrots, shredded
  • 1 cup cucumber, sliced
  • 1/4 cup green onions, chopped
  • 1/4 cup sesame oil
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon sesame seeds

Instructions

  1. Cook the rice noodles according to package instructions.
  2. In a skillet, cook the turkey bacon until crispy, then crumble.
  3. In a large bowl, combine the cooked noodles, turkey bacon, bell peppers, carrots, cucumber, and green onions.
  4. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, and honey.
  5. Pour the dressing over the salad and toss to combine.
  6. Sprinkle with sesame seeds before serving.
